Home made Pocky?
« on: November 16, 2008, 01:03:07 am »
I just had a thought that might either blow up in my face or rock something awesome.

What if you took some sort of sweet biscuit dough, put it through a spaghetti maker? If I'm thinking correctly (and given it's late, I might not be), if you cook the cut strings, dipped them in chocolate (possibly rolling them in something while still wet), wouldn't that essentially be that which is Pocky?

Hang it to dry by the uncoated ends, and you'll even get the nice tip!

Think of the mad possibilities! Oreo pocky! Butterfinger pocky! Ramune pocky? I don't know!

I might have to try this tomorrow! I'm making an apple tart, what's the harm in making some biscuit sticks along side?

I think you'd have to get some quick-drying chocolate, or something, or it seems to me it would all drip off before it dried.  Like, maybe that Magic Shell ice-cream sauce they have?

I'm suspecting multiple dips myself. Not entirely sure. I was thinking that the chocolate might be too thick and would need to be cut a little bit with a splash of milk. Rethinking it, I'm probably wrong on that.

Either way, I'm going to use an animal cracker dough recipe as my base. I think it'll be the right biscuit crunch and be sweet enough.

If you use biscuit dough, it'll have to be something with a homogenous consistency or else it will fall apart.  It also would have to bake really solid to hold its shape as a stick.

I've always compared Pocky's "biscuit" portion to pretzels, albeit minus the salt. However, pretzels have a certain taste that doesn't match Pocky, so perhaps it'd be better to compare it to some sort of cookie dough.

Hmmm, how about that? Got some sort of cookie dough that'd resemble Pocky? Like shortbread, but less crumbly?

This would work! I'd look for a sweet crispy breadstick recipe (I happened to see something about crispy breadsticks on tv one time, so you should find a recipe). I make chocolate dipped pretzel sticks for Christmas sometimes and the process is about the same it seems. Generally one dip into the sauce is enough, since melted chocolate hardens pretty quickly. Rolling it in toppings while it's still gooey will work too. n.n

The great Pocky experiment has begun!

I ended up trying out an Animal cracker dough because it's both sweeter and has a biscuit consistency in the packages. I dipped it in semi-sweet chocolate.

All in all, it was both a fail and success.

I found out I don't have a spaghetti cutter, so I had to cut by hand. The animal cracker dough had oatmeal in it that I finely chopped with a blender, but I think it really was detrimental since the dough was brittle and weak after it was cut and cooked. Pretzel dough might work if I could figure out how to sweeten it (Thanks, Radien!). Ichigo, I was also thinking breadstick dough at the grocery store today, too!

The chocolate can't be just melted. It was like toothpaste consistency, even with a little butter added (apparently any liquid with melted chocolate is bad??). I need to find a recipe for a thinner chocolate. I ended up spiral rolling and scraping excess off to get an "even" coating. "Even" meaning not with a half inch of chocolate on one side only.

I took pictures if you guys want me to post them. They're not pretty, but it was my first attempt.

For the chocolate, you should try making it with a ganache (so just ad some hot whipping cream to melt the chocolate).

Isn't that like chocolate fondue? Fruits dipped in chocolate...angel food caked dipped in choco... if you just let it dry, you'd get semi-same results. I grew up eating finger biscuits (no fingers harmed!!!) and they are just a thicker version of a non-coated pocky stick.  Dip those in melted dark chocolate and melt away your world!

That's what I was going to do next. My friend made this, I don't quite know how to describe the glory of this cake, with ganache on it. I think it was just chocolate mixed with milk. That would work, I'd bet.

I'd like to see pictures!

And the most important thing; how did they taste?

You know, they're not bad tasting! Grainy because of the oatmeal, but the biscuit isn't too sweet. Too much chocolate, though. They're really soft, too. It holds its shape well enough, but there's no crunch. I'm going to change the dough for sure.

DARK chocolate "psycho" desu!  :P

I'd suggest getting some fast-melting chocolate and melt it with the double boiler method. I think the last time I did chocolate dipped stuff, I added some milk to the chocolate to make it a little more liquid.

Try making giant pocky first :D That may be a little easier to manage :P

The First Pocky Attempt
Dough: Basic Animal cracker recipe (http://allrecipes.com/Recipe/Animal-Crackers/Detail.aspx)
Chocolate: Melted semi-sweet chocolate with a bit of butter

Here's the ingredients for the dough. The honey's in a Zip-Loc because I cracked open the bear accidentally. Easy enough stuff.

Mixing the dough. The oats were blended in a blender, but don't mix the entire dough in there. It doesn't work out. Amateur mistake ._.

This is the dough rolled out. You can see how the oats are in the dough. I think it made it too grainy and elastic.

The cookie strips were cut by hand. I cut them thick at first, but then I got it down to a more manageable size.

The cookie dough only puffed up in a few areas, thank goodness. A test cookie showed a lot of puffing.

Final product: full shot. This was very time-consuming work. The chocolate didn't work out too well.

Close up on the final product. In all, it's delicious, but the cookies are lumpy, rather unpleasant looking, and messy. It still worked.

I guess if I make another batch, I'll post the results. This was an easy recipe, and if you want to try, feel free. It's not pretty, but it's tasty!

only problem with this is that ganache doesn't set, which is why it makes great frosting or truffel filling

my wedding cake will have ganache in its bottom layer

Congrats on your first attempt. :D Yes, it does look yummy, despite being messy.

I'm glad you like my pretzel suggestion, though I'm not sure the taste will be quite right.  Chocolate-covered pretzels are tasty, but for different reasons.

I think you'll want to avoid whole oats, no matter how finely you plan on chopping them. Also, listen to Superjaz; I had enough of her cookin' to say that she knows what she's doing.

I woke up this morning with two thoughts: "Ow. My headache's still here" and "Hmm, Superjaz said ganache doesn't set. That could be a problem".

Seriously. That's what it was. I'm wondering if I cut the salt content in the pretzel dough it might work. But pretzels tend to puff, don't they? Chocolate covered pretzels are tasty, so if it's not Pocky-like, that's perfectly fine!

I think I'm going to go for a breadstick dough first. I don't know when I'll make the next batch, but I want to keep trying.

Now if I could only remember what that dream I had was about. Darth Vader?

Have you tried getting fast-melting dipping chocolate? Mix a little milk in and it gets a little more liquid, It will still set :P

I haven't tried this, but I found it by doing a web search.

Chocolate coated Pocky:
1 cup whole wheat flour
1/8 cup sesame
1/8 tsp salt
1/4 cup butter
1/8 cup brown sugar

1/8 cup soy bean jam (estimated, I just added the water into the jar...)
1 egg yolk
1/4 cup water

1. Mix flour, sesame, and salt
2. Cut in butter
3. Mix jam, yolk, and water, slowly add to flour mixture
4. Roll out and slice into thin strips
5. Roll into tubes and freeze, ~ 1hr
6. Bake until golden , 400F 10 min

Once the strips cool, poured microwave-melted dark chocolate on them and let them cool on saran wrap.
Once the chocolate solidifies, Pocky will easily came off the saran wrap.

It doesn't say when you put in the brown sugar.  Your free to try it out and let us know how it turned out.  ;D

For the chocolate, you should try making it with a ganache (so just ad some hot whipping cream to melt the chocolate).

only problem with this is that ganache doesn't set, which is why it makes great frosting or truffel filling

Well, ganache does set, that's how truffles hold their shape... I've use ganache rather than chocolate frosting and it does have a hard set to it.

Excellent! I'll look up a truffle recipe for the proper setting chocolate. Thank you, megchan! That sounds like it might work out extremely well!

Haha. Well, zombie attack with Arnold Schwarzenegger as the leader, yelling from a double decker tour bus, "We will find the last human girl and eat her for dinner!", as I try and sneak by them... yeah. I have weird dreams sometimes.

Don't get me started on the one where I lost my eyeballs. XD

...Dude. Are all your dreams like that?  You might even be able to compete with my sister for entertaining dreams.

On rare occassion, yes.

I had another zombie nightmare that involved a mall on Mars after the mall had closed. Also another zombie dream on my old university campus. That was a creepy dream.

Umm..  ???  How did this thread switch from delicious Homemade Chocolate Pocky, to dreams of man eating zombies and missing eyeballs?  I came back to see if anyone had tried the receipe yet, and now I have no appetite to speak of.  Eww!!  In fact I may be psycologically affected for my Pocky desires for the future (looks at chocolate pocky and imagines blood coating it and maggots crawling around it. shiver)  Can we get back to Pocky now?   ::)

Absolutely right. The offenders should be punished.

....er.

Melted Jolly Rancher would soon become hardened Jolly Rancher... do you really want a biscuit snack coated in hard candy?...

I still like the idea of Oreo Pocky. Most of the good ideas have been tried already by the real Pocky. But not Oreo.

You guys want to try making Halloween Pocky?  How about dipping it in some sort of gooey red syrup Cherry or Strawberry flavored then rolling it in coconut to look like maggots?

Hmm, gingerbread dough would probably be too soft for Pocky, wouldn't it?  Perhaps whatever they make gingersnaps out of, coated with gingerbread frosting.

Or just with cream cheese.  Mmm....

Gingersnaps can be a crispier dough depending on what you use. Gingerbread can be pretty tough if you cook it a little longer.

I say go for it! Gingerbread pocky sounds delicious!

"Anata wa tashi mo pocky"? I don't know what that means. "Anata wa" would be "You are" but "watashi" would be "Me/I" so "watashi mo" would be "my".

"You are my pocky"?

The easiest way to start making Pocky is to buy plain Pretz.  ;)

Also, soylent pocky is soooooo last year....

Go dig up the Bertie Botsu Every Flavor Pocky Thread in the forum archives.

According to my sources the Pocky slogan repeated in the commercials is basically, "I am, You Are Pocky". As exemplified with the dancing zombies and the various romances, Pocky is something that everyone can enjoy no matter their differences.

To gain true Pocky Baker victory, you must supply Pocky Club with a package of Pocky that will not kill Dawn the Relations Director. Her allergies prevent her from eating many things and Pocky is unfortunately among them.

It's really crispy without being burnt. that's what gets me. I don't know how they do it.

*serious pocky conversation*

I didn't make Pocky for the Christmas get together. Argh. I suck.

Welcome welcome! I hope the forums treat you right, Darryn-chan! It gets a little nuts sometimes, but over all this is a cool place to be.

Bundyangel, yes! Please try it! I want to try rolling in oreo, too. I want to find a better chocolate covering for my pocky along with a better biscuit. It's kind of hard.

I've got to say, and I hope this doesn't insult you, your name weirds me out because it makes me think of Ted Bundy. And he was far from an angel. XD;;

No, it has nothing to do with ted bundy.

My last name in rl is Bundy, and I'm the youngest in the family, and so treated like the angel. So that's where it comes from.

There's new pocky out now.

They brought back the Marble style Pocky for Valentine's day.

Looks like chocolate with a Rasberry swirl or a mixed Berry swirl. Mmmmm.

The new Tsubu (chunky) flavor is KIWI!

I'm still bummed I never got a box of Orange Tsubu Pocky.
